This paper points to better enforcement of Fair Labor Standards Act, Occupational Safety and Health Act, and National Labor Standards Act as necessary policy interventions to protect restaurant workers, who are in many ways paralleling the garment workers in the sweatshops of the nineteenth and early twentieth centuries.
